This french chocolate mousse recipe is very decadent, easy to make, and really adaptable – you can add brandy or kahlua and even some orange zest and you have lots of different versions.

Mousse au Chocolat

Serves 4

8oz good quality cooking chocolate
3 egg yolks
3 egg whites
1/2 cup icing sugar
2 tbspn salted butter

Put chocolate and butter in a metal bowl and place over saucepan filled with water. Bring to a medium heat (make sure the water doesn’t ever boil or touch the metal bowl) and melt the chocolate and butter carefully, stirring until the mixture is smooth. Leave to cool, then beat in the sugar and egg yolks.

In a separate bowl, beat the egg whites until they form firm peaks, then fold into the chocolate mixture.

Spoon into 4 dessert glasses, and put in the fridge. Leave for around 12 hours or overnight to set.
